There’s one thing my husband and I can always agree on… a really good burger.
Over the years, he’s come up with some pretty incredible burger combinations, and every once in a while one of them turns into a recipe that we both know has to be shared. This Texas Toast Double Smash Burger is one of those recipes.
Instead of using a regular hamburger bun, we decided to stack two thin, crispy smash burgers between thick slices of buttery Texas toast. Then we loaded it up with melty American cheese, crispy bacon, crunchy French fried onions, fresh tomato, crisp lettuce, and plenty of creamy garlic aioli.

For the Burgers
- 1½ pounds 80/20 ground beef, divided into eight 3-ounce balls
- 8 slices American cheese
- 8 slices Texas toast
- 8 slices cooked bacon
- 2 medium tomatoes, sliced
- 4 leaves iceberg or green leaf lettuce
- 1 cup crispy French fried onions
- 4 tablespoons softened butter
Garlic Aioli
- 1 cup mayonnaise
- 3 cloves garlic, finely grated
- 2 teaspoons fresh lemon juice
- ½ teaspoon black pepper
- ¼ teaspoon kosher salt

Burger Seasoning
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika (optional)
How to Make Texas Toast Double Smash Burger
Step 1
Mix together the mayonnaise, garlic, lemon juice, salt, and pepper until smooth. Cover and refrigerate while you prepare everything else so the flavors have time to blend.
Step 2
Cook the bacon until crispy, then transfer it to paper towels to drain.
Step 3
Spread softened butter on both sides of each slice of Texas toast. Toast them on a hot griddle or large skillet until they’re golden brown and lightly crisp. Set aside.
Step 4
Preheat your Blackstone, flat-top griddle, or cast-iron skillet over medium-high heat.
Divide the ground beef into eight equal 3-ounce balls. Don’t pack them tightly—keeping them loose helps create those crispy edges everyone loves.
Step 5
Place the beef balls onto the hot cooking surface, leaving plenty of space between each one.
Using a burger press or heavy spatula with a piece of parchment paper, smash each ball as thin as possible.
Immediately season with the salt, pepper, garlic powder, and smoked paprika.
Cook for about 2 minutes, or until the edges become deep brown and crispy.
Step 6

- Crispy bacon
- Crispy French fried onions
- Leaf lettuce
Spread another layer of garlic aioli onto the top slice of Texas toast before placing it on the burger.
Serve immediately while everything is hot and the cheese is perfectly melted.
