How to Make the Apple Puff Pastry Rolls

To make these apple puff pastry rolls, start by peeling and dicing three medium apples. In a medium saucepan, mix the apples with the lemon juice, lemon zest, sugar, cinnamon, and vanilla and cook over medium heat until the apples are just fork tender, about 5 minutes. Set aside to cool. Melt the butter. Combine the white sugar and the cinnamon.

Next, preheat your oven to 400°F (200°C). Roll out the puff pastry dough on a lightly floured surface. Brush melted butter over puff pastry and sprinkle the cinnamon sugar evenly over the butter. Spoon the apple filling onto the puff pastry and roll up the pastry, starting at the short end, and pinch the edge to seal. Slice the roll into 10 1-inch slices.
