Ingredients
  

  • 4 cups cabbage
  • 1 medium bell pepper green, red or yellow
  • 1 medium carrot
  • 3/4 cup apple cider vinegar
  • 3/4 cup white sugar
  • 2 Tbsp water
  • 1 tsp celery seed
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions
 

  • In a small bowl whisk together the vinegar, water, sugar, celery seed, salt and pepper.
  • Cut cabbage in 1/2 and remove core. Using a food processor finely chop cabbage, carrot and pepper. You can also cut the cabbage with a knife or use a box shredder.
  • Transfer vegetables to a large bowl and pour dressing over them. Cover tightly and refrigerate for at least 1 hour-the longer the better.
