Ingredients Needed For Strawberry Truffles
- 1 box strawberry cake mix
- 1 (8 oz) block cream cheese, softened
- 1 cup white chocolate chips
- 1 package white candy melts for dipping
- 1 package pink or red candy melts (for drizzling)
- Sprinkles, for decorating (optional)
- Lollipop sticks (optional, for cake pops)
How To Make Strawberry Cream Cheese Truffles
Heat-Treat the Cake Mix – Follow the oven or microwave method below and let the cake mix cool completely.
Mix the Truffle Dough – In a large bowl, beat the softened cream cheese until smooth. Add the cooled cake mix and mix until fully combined. It will start out crumbly – keep mixing it will come together!! Fold in the white chocolate chips.
Roll into Balls – Using a spoon or a small cookie scoop (use a 1-tablespoon cookie scoop typically #60 size to yield approximately 24–30 truffles.) This ensures evenly sized, bite-sized truffles that are easy to dip and enjoy! Roll the mixture into balls. Place them on a parchment-lined baking sheet.
Cake Pop Option – If making cake pops, insert a lollipop stick into each truffle before dipping. This helps prevent the chocolate from cracking.
Melt the Candy Melts – You can melt the candy melts in the microwave in 30-second intervals, stirring in between, until smooth. Alternatively, use a double boiler by placing a heatproof bowl over a pot of simmering water and stirring until melted.
Dip in Candy Melts – Using a fork or dipping tool, dip each truffle (or cake pop) into the melted candy. Let the excess drip off and place back on the parchment paper.
Decorate – Drizzle with melted pink or red chocolate. Before the candy coating hardens, sprinkle with festive sprinkles.
Let Set & Serve – Allow the truffles or cake pops to set at room temperature before serving. Store in an airtight container in the refrigerator for up to a week.
Why Heat-Treat Cake Mix?
Since cake mix is made with raw flour, it should be heat-treated before using in no-bake recipes. This eliminates any potential bacteria. You can do this in the oven or microwave:
- Oven Method – Spread the cake mix onto a baking sheet and bake at 350°F for 5 minutes. Let it cool completely before using.
- Microwave Method – Place the cake mix in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until it reaches 165°F (about 90 seconds total). Let it cool before mixing.
Tips & Variations
Let the truffle balls reach room temperature before dipping to prevent the chocolate from cracking.
Swap out the strawberry cake mix for red velvet or chocolate for a different flavor.
Use white or dark chocolate for dipping instead of candy melts.
Add crushed freeze-dried strawberries for an extra fruity kick.
These Strawberry Cream Cheese Truffles are the ultimate Valentine’s Day treat—easy, decadent, and beautifully festive. Enjoy sharing (or indulging in them yourself)!
