These Strawberry Cream Cheese Truffles are an easy, no-bake Valentine’s Day treat! Made with strawberry cake mix, cream cheese, and white chocolate chips, then dipped in candy melts and decorated! They’re creamy, delicious, and perfect for gifting.
Heat-Treat the Cake Mix – see note below for instructions
In a large bowl, beat the softened cream cheese until smooth. Add the cooled cake mix and mix until fully combined. Fold in the white chocolate chips.
Using a small cookie scoop or spoon, roll the mixture into bite-sized balls and place them on a parchment-lined baking sheet.
If making cake pops, insert a lollipop stick into each truffle before dipping.
You can melt the candy melts in the microwave in 30-second intervals, stirring in between, until smooth. Alternatively, use a double boiler by placing a heatproof bowl over a pot of simmering water and stirring until melted.
Using a fork or dipping tool, dip each truffle (or cake pop) into the melted candy and let the excess drip off. Place back on the parchment paper.
Decorate! Before the candy coating hardens, immediately sprinkle with festive sprinkles.
Allow the truffles or cake pops to set at room temperature before serving. Store in an airtight container in the refrigerator for up to a week.
