Braising Beef Short Ribs
Heat two tablespoons of oil in a cast iron skillet or Dutch oven. While the oil is heating up, liberally salt and pepper the short ribs. Once the oil is hot, add the short ribs and brown them on all sides. This is where the flavor starts!
Add the onion and garlic to the skillet or dutch oven and scrape up all of those delicious, browned bits from the bottom. Add one cup of dry red wine and two cups of beef broth. Finally, add two sprigs of fresh thyme and two sprigs of fresh rosemary to the pot.
Cover your cast iron skillet or dutch oven and place the short ribs in the oven at 325 degrees Fahrenheit for about three hours, or until the meat is fall-off-the-bone tender.

Red Wine: Substitute alcohol free wine, beef broth, chicken broth, pomegrante juice, cranberry juice or red wine vinegar ( use 1/2 water mixed with vinegar).
Fresh Thyme & Rosemary: If you do not have fresh herbs, use 1 1/2 tsp dried thyme and 1 1/2 tsp dried rosemary.
