  • 1 Lb. lean ground beef
  • 3 Lbs. potatoes
  • 8 cups beef broth or chicken broth
  • 1 cup carrots diced
  • 1/2 cup celery diced
  • 1 cup onion diced
  • 2 bay leaves
  • 2 sprigs fresh thyme
  • 2 Tbsp dried parsley

  • Remove the bay leaves and serve hot, garnish with fresh thyme or parsley if desired.
