I love having my lunches ready to go for the workweek, but there’s one thing I don’t love about meal-prepping salads. By the time Wednesday rolls around, that beautiful lettuce I packed on Sunday can be a wilted, soggy mess. Not exactly something I’m looking forward to eating!
That’s one of the reasons I started making this Mediterranean Chopped Cabbage Salad. Instead of lettuce, I’m using finely chopped green cabbage, and what a difference it makes! The cabbage stays nice and crunchy, even after a few days in the refrigerator.

And don’t think this is just a bowl of cabbage! We’re loading it up with cucumbers, juicy tomatoes, sweet bell peppers, chickpeas, green olives, pepperoncini, feta cheese, and hard-boiled eggs. Then we’re tossing everything with a homemade Mediterranean dressing that has just the right amount of tang.
I like making one big bowl of this salad, enjoying some right away, and packing the rest for my lunches. I just keep the dressing separate until I’m ready to eat.
It’s fresh, colorful, loaded with flavor, and honestly, I could eat this salad several days in a row without getting tired of it!

Why You’ll Love This Mediterranean Chopped Cabbage Salad
There’s a lot to love about a good chopped salad, especially one that doesn’t rely on lettuce!
It stays crunchy. Cabbage holds up much better than lettuce, making this salad a great option for preparing ahead.
It’s loaded with flavor. Between the olives, feta, pepperoncini, and homemade dressing, there’s something delicious in every bite.
It’s hearty enough for lunch. Chickpeas and hard-boiled eggs give this meatless salad a little more staying power.
You can make it your own. Don’t like a particular vegetable? Leave it out or replace it with something you enjoy.
It makes a beautiful salad. All those colorful vegetables look gorgeous together, whether you’re serving it at a family dinner or taking some for lunch the next day.
And best of all, you can do most of the chopping ahead of time!
Tools I Use

Ingredients You’ll Need
This salad is packed with fresh vegetables and a few Mediterranean-inspired favorites.
Green Cabbage
Cabbage is the star of this recipe!
I use my mandoline to thinly shred the cabbage, then give it another quick chop with a knife. I don’t want long strands like you would find in coleslaw. Instead, I want smaller pieces that mix right in with the other ingredients.
That way, you get a little of everything in each bite.
Chickpeas
Chickpeas add a nice texture and help make this salad filling enough for lunch.
Just drain and rinse a can of chickpeas before adding them.
Cucumbers
I like using an English cucumber because the skin is tender and the seeds are small. However, a regular cucumber works just fine.
Cut it into small bite-size pieces.
Cherry Tomatoes
Sweet cherry or grape tomatoes add beautiful color and plenty of freshness.
Simply cut them in half.
Bell Peppers
Red bell peppers add a little sweetness and another layer of crunch. You can also use orange or yellow peppers for even more color.
Red Onion
I love the flavor of red onion in this salad, but a little goes a long way!
Chop it finely so it doesn’t overpower the other ingredients.
Green Olives
I’m using green olives in this recipe, and I love the salty, briny flavor they bring to the salad.
You can substitute Kalamata olives if you prefer.
Pepperoncini or Banana Peppers
These add a wonderful tangy bite without making the salad overly spicy.
And don’t throw away the juice! We’re using a little of that brine in our homemade dressing.
Feta Cheese
Feta is one of my favorite additions to this salad. Its creamy, salty flavor pairs perfectly with the crunchy cabbage and vegetables.
Hard-Boiled Eggs
Hard-boiled eggs make this salad a little heartier.
I like adding them at the end so they don’t get broken apart when I toss everything together.
Fresh Parsley
A little chopped parsley adds fresh flavor and a beautiful pop of green.

Homemade Mediterranean Salad Dressing
Now, let’s talk about the dressing because this is what brings everything together!
We’re making a simple vinaigrette with olive oil, red wine vinegar, fresh lemon juice, Dijon mustard, garlic, oregano, and a little honey.
But here’s something I like to do.
Add a splash of pepperoncini or banana pepper juice!
Since we’re already using pepperoncini in the salad, why waste that flavorful brine? It adds an extra tang that works beautifully with the feta and olives.
Just put everything in a jar, screw on the lid, and give it a good shake.
That’s it! No blender or fancy equipment needed.
How to Make Mediterranean Chopped Cabbage Salad
Step 1: Shred and Chop the Cabbage
Start by removing any damaged outer leaves from the cabbage.
Cut the cabbage into wedges and remove the tough core.
Using a mandoline, thinly shred the cabbage. Then place the shredded cabbage on a cutting board and give it another quick chop.
I like those smaller pieces because this is a chopped salad, not coleslaw.
If you’re using a mandoline, always use the hand guard or a cut-resistant glove.
Transfer the chopped cabbage to a large salad bowl.
Step 2: Add the Fresh Vegetables
Next, add the chopped cucumber, cherry tomatoes, bell pepper, and red onion.
Try to keep the pieces fairly uniform in size. That way, everything mixes together nicely.
Step 3: Add the Mediterranean Goodies
Now for the good stuff!
Add the drained chickpeas, sliced green olives, pepperoncini, and chopped parsley.
Then sprinkle the feta cheese over everything.
At this point, just look at all those beautiful colors!

Step 4: Make the Dressing
Add the olive oil, red wine vinegar, lemon juice, Dijon mustard, garlic, oregano, honey, pepperoncini brine, salt, and pepper to a jar with a tight-fitting lid.
Shake until everything is well combined.
Give it a taste and adjust the seasoning if needed.
Because the olives, feta, and pepperoncini already bring some saltiness to the salad, I recommend tasting the dressing before adding extra salt.
Step 5: Toss the Salad
When you’re ready to serve, drizzle the dressing over the salad and give everything a good toss.
Start with a little dressing and add more as needed.
I like the vegetables nicely coated, but I don’t want dressing pooling in the bottom of the bowl.
Step 6: Add the Hard-Boiled Eggs
Finally, arrange the hard-boiled egg quarters over the top.
And there you have it!
One big, beautiful bowl of Mediterranean Chopped Cabbage Salad.
Nettie’s Tips for the Best Chopped Cabbage Salad
Chop the cabbage nice and small. This is probably my biggest tip. Using a mandoline first and then chopping the shreds makes a big difference in the finished salad.
Dry the vegetables well. Extra water can dilute the dressing and make the salad watery.
Don’t overdo the dressing. Start with a little and add more as needed. You can always add more, but you can’t take it back out!
Save the eggs for last. Adding the hard-boiled eggs after tossing keeps them from breaking apart.
Taste before adding more salt. Between the feta, olives, and pepperoncini, there’s already plenty of salty flavor going on.
Make the dressing ahead. I like keeping homemade dressings in a jar in the refrigerator. Just give it a good shake before using.

How I Meal Prep This Salad for Lunches
This is one of those salads I love having ready when the workweek gets busy.
After all, when lunchtime rolls around, I don’t always feel like stopping to chop a bunch of vegetables!
I divide the chopped cabbage, chickpeas, peppers, onion, olives, and pepperoncini between airtight containers.
Then I add the cucumber, tomatoes, feta, and hard-boiled eggs. I keep the dressing in separate little containers.
When I’m ready for lunch, I pour on the dressing, give everything a toss, and I’m ready to eat.
My favorite part is that the cabbage doesn’t wilt the way lettuce does.
For the best freshness, I generally prepare enough for three or four days at a time. If I want to have this salad later in the week, I’ll chop more vegetables and assemble a fresh batch.
Just remember to keep everything refrigerated until you’re ready to eat.
Easy Variations and Substitutions
One of the things I love about chopped salads is how easy they are to change depending on what you have in the refrigerator.
Use Kalamata olives. I’m using green olives, but Kalamata olives give the salad a more traditional Greek-inspired flavor.
Mix green and red cabbage. Using a little red cabbage makes the salad even more colorful.
Add artichoke hearts. Chopped marinated artichoke hearts would be delicious in this recipe.
Leave out the eggs. If you prefer a lighter side salad, you can skip the hard-boiled eggs.
Add more chickpeas. An extra helping of chickpeas makes the salad even heartier.
Try fresh herbs. Dill, parsley, or a little fresh oregano would work beautifully.
Add grilled chicken. Although I love this salad without meat, you can easily add grilled or rotisserie chicken to individual servings.
Make it vegan. Leave out the eggs and feta, and substitute maple syrup for the honey in the dressing.
What to Serve With Mediterranean Chopped Cabbage Salad
Honestly, I think this salad makes a wonderful lunch all by itself.
However, if you’re serving it for dinner or taking it to a gathering, there are plenty of delicious ways to enjoy it.
Warm pita bread or pita chips are perfect alongside the salad. You could also serve it with hummus or grilled vegetables.
And if you’re planning a simple soup-and-salad dinner, pair it with a bowl of my homemade Chicken and Rice Soup.
This salad also makes a great side for grilled chicken, steak, or fish.
How to Store Leftover Cabbage Salad
Store leftover Mediterranean chopped cabbage salad in an airtight container in the refrigerator.
For the best texture, keep the dressing separate until you’re ready to serve.
I recommend enjoying the prepared salad within 3 to 4 days.
The cabbage itself stays crisp longer than delicate lettuce. However, the cucumbers and tomatoes can release moisture as they sit, especially after you’ve added dressing.
If you’ve already dressed the entire salad, refrigerate the leftovers promptly and use them sooner for the best texture.
Keep the dressing refrigerated in a covered jar and shake well before using.
FAQ
Can I make Mediterranean chopped cabbage salad ahead of time?
Absolutely! That’s one of my favorite things about this salad. Cabbage holds its crunch much better than lettuce, making it a great choice for make-ahead lunches. Just keep the dressing separate until you’re ready to eat.
Can I use bagged shredded cabbage?
Yes! Bagged shredded cabbage is a great shortcut. However, I recommend giving it another quick chop so the pieces are smaller and easier to eat. That’s what gives this salad its wonderful chopped texture.
Do I need to massage the cabbage before making this salad?
No, there’s no need to massage the cabbage. Since we’re shredding it thinly and then chopping it into smaller pieces, it already has a nice texture while keeping that wonderful crunch.
