This creamy Boursin Potato Bacon Casserole is made with Yukon Gold potatoes, crispy bacon, sweet onion, and a rich garlic herb cheese sauce—using only milk, no cream. Precooked potatoes speed up bake time, making this an easy and flavorful side dish for holidays or family dinners.

Instructions
Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or cooking spray.
Place sliced potatoes in a large pot of salted water. Bring to a simmer and cook for 5–7 minutes, just until fork-tender. Drain and set aside.
In a medium saucepan, melt the butter over medium heat. Whisk in the flour (if using) and cook for 30 seconds.
Gradually whisk in the milk and cook until slightly thickened, about 2–3 minutes.
Add the Boursin cheese, salt, and pepper. Stir until melted and smooth. Remove from heat.
Layer half of the potatoes in the bottom of the prepared baking dish. Top with half of the onions and half of the crumbled bacon. Pour on half the Boursin cheese sauce.
Repeat the layers with the remaining potatoes, onions, bacon, and sauce.
Bake uncovered for 35–40 minutes, or until the casserole is golden and bubbling.
Let rest for 10 minutes before serving. Garnish with fresh herbs, if desired.
