Casserole

  • 2 cups rice cooked
  • 2 cups chicken shredded
  • 1 cup buffalo sauce
  • 1 cup ranch or blue cheese dressing
  • 1 cup sour cream
  • cups cheddar cheese shredded (reserve 1/2 cup for topping)
  • ½ cup mozzarella shredded
  • ½ cup celery chopped
  • ¼ cup green onions sliced

Topping

  • ½ cup crackers or panko crushed
  • 2 tbsp butter melted
  • ½ cup cheese

Instructions
 

  • Preheat oven: Set oven to 375°F and lightly grease a 9×13 baking dish.
  • Mix casserole filling: In a large bowl combine cooked rice, shredded chicken, buffalo sauce, dressing, sour cream, 1 cup cheddar + ½ cup mozzarella, celery, and green onions. Stir until creamy and evenly coated.
  • Spread in dish: Transfer mixture into prepared baking dish and smooth into an even layer.
  • Make topping: In a small bowl, stir together crushed crackers and melted butter until coated. Sprinkle evenly over casserole.
  • Add final cheese: Sprinkle the reserved ½ cup shredded cheese evenly over the top.
  • Bake: Bake 25–30 minutes until hot, bubbly, and lightly golden.
  • Rest: Let sit 5 minutes before serving so casserole sets properly.
