This Cowboy Tater Tot Skillet combines ground beef, sausage, peppers, onions, a creamy cheddar filling, crispy tater tots, and melted cheese in one easy cast iron skillet dinner. Make it on the grill or in the oven for a hearty family meal.
Preheat your grill for indirect cooking to 375°F. If baking in the oven, preheat the oven to 375°F.
Place a 12-inch cast iron skillet over medium heat and brown the ground beef and breakfast sausage, breaking the meat apart as it cooks. Drain excess grease if needed.
Add the diced onion and bell peppers. Cook for about 5 minutes until softened. Stir in the garlic and cook for 1 minute more.
Add the Worcestershire sauce, smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper. Stir well.
Add the corn, cream of cheddar soup, and sour cream. Stir until fully combined and creamy.
Spread the filling into an even layer in the skillet.
Arrange the frozen tater tots over the top of the filling.
Place the skillet on the grill over indirect heat and cook for 25 to 30 minutes, or until the tater tots are golden brown and crispy.
Sprinkle the shredded cheddar cheese evenly over the tater tots.
Continue cooking for 5 minutes or until the cheese is melted.
Remove from the grill, garnish as desired, and serve hot.
