Ingredients
  

  • 1 1/2 cups wild rice
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 medium onion diced
  • 2 large carrots diced
  • 2 celery stalks diced
  • 2 cloves garlic minced
  • 6 cups turkey broth or chicken broth
  • 2 cups cooked turkey shredded or diced
  • 1/2 tsp dried Thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper to taste
  • 1/2 cup heavy cream or half-and-half for a lighter option
  • Fresh parsley chopped, for garnish (optional)

Instructions
 

  • Heat the olive oil and butter in a large pot or dutch oven. Add diced onions, carrots, and celery, cooking until softened, this should take about 10 minutes. Add garlic and cook a few minutes.
  • Sprinkle about 2 tablespoons of flour over the vegetables, stirring for 1-2 minutes.
  • Slowly pour in the chicken or turkey broth stirring constantly. Add the wild rice, thyme, rosemary, salt, and pepper. Cover and bring the mixture to a boil before reducing to a simmer. Let it cook until the rice is tender, which should take about 30-45 minutes.
  • Once the rice is cooked, add the leftover turkey, and let the soup simmer for another 10 minutes. Stir in the cream and serve.
