Ingredients
  

For The Chicken

  • 4 chicken breasts boneless
  • 1/2 cup Caesar dressing for brushing
  • 1 cup mozzarella cheese shredded

For The Salad

  • 4 cups romaine or iceberg lettuce shredded
  • 1/3 cup shredded parmesan cheese shredded
  • 1/4 cup Caesar dressing
  • 2 Tbsp lemon about 1/2 fresh lemon squeezed
  • Croutons for topping
  • Shaved parmesan cheese optional

Instructions
 

  • Preheat your grill to medium heat.
  • Brush both sides of each chicken breast with Caesar dressing (you'll use about 1/2 cup total).
  • Grill chicken for about 6–7 minutes per side, or until internal temperature reaches 165°F.
  • During the last minute of cooking, sprinkle mozzarella cheese over each chicken breast. Close the grill lid to melt the cheese.
  • While the chicken is grilling, prepare the salad topping: In a bowl, combine shredded lettuce, shredded parmesan, 1/4 cup Caesar dressing, and fresh lemon juice. Toss to coat evenly.
  • Remove chicken from the grill and place on a serving dish.
  • Top each chicken breast with a generous scoop of the Caesar salad mixture.
  • Finish with croutons and shaved parmesan on top. Serve immediately.
