Combine all the ingredients for the everything seasoning mix in a small bowl. Mix well and set aside.
Preheat oven to 425℉
In the bowl of your food processor add the flour, salt and sugar. Pulse a few times to mix together.
With your processor running slowly drizzle in the olive oil until and continue running until it resembles coarse crumbs.
Gradually pour it into the food processor, pulsing until the dough to comes together. You may need a bit more or less water, so adjust accordingly until the dough forms.
Remove the dough from the food processor, shape it into a disk, wrap it in plastic wrap, and refrigerate it for about 30 minutes.
Roll out the chilled dough on a floured surface about 1/16 ". Use a knife or pizza roller to cut the dough into 1" X 3"
Place your cracker shapes on a baking sheet lined with parchment paper. Using a pastry brush, brush olive oil over each cracker and sprinkle a generous amount of your homemade everything bagel mix on top, pressing it gently into the dough.
Bake for 15-20 minutes, or until they turn golden brown. Cool on wire rack.
