Rub the beef with salt and pepper and in a cast iron skillet or heavy skillet drizzle 2 Tbsp. oil. Heat the oil until it's good and hot and place the roast beef in the skillet. Sear each side until it's good and brown, for a few minutes on each side. Then remove the beef and scrape any bits from bottom of skillet into crockpot and place the beef in the crockpot. Pour 4 cups of homemade or good quality beef stock, 1/2 cup of dry white wine or white cooking wine, 3 bay leaves, 1 tsp of thyme, and 2 tsp salt and 2 tsp pepper over beef and cook on low for 8 hours.
When the roast beef is done, remove to a dish to cool and break into bite size pieces. Transfer the broth to a stockpot, add an additional 2 cups of beef stock. Heat broth to boiling and while the broth is heating peel and cut potatoes into small 1 1/2 " pieces and add potatoes, beef and noodles to boiling broth. Boil 20-30 minutes. Serve with crusty bread.
