This easy macaroni salad recipe is a classic, creamy side dish that's perfect for picnics, BBQs, and summer gatherings. Made with simple ingredients like elbow macaroni, celery, onions, hard-boiled eggs, and a tangy mayo-based dressing, it’s ready in just 30 minutes and even better after chilling. Perfect for potlucks
In a large bowl combine cooked macaroni, diced celery, diced onion, chopped hard boiled eggs.
In a medium bowl whisk together the mayonnaise, vinegar, sugar, heavy cream, salt and pepper.
Pour dressing over macaroni salad ingredients and mix well. Cover tightly and refrigerate for at least 1 hour.
Notes
To hard-boil eggs, place eggs in cold water in a pot, cover with a lid. Bring to a boil. Boil 1 minute. Turn off heat and let sit in water for 20 minutes. Drain hot water off the eggs and run cold water over eggs and peel. This works every time for me.
