  • 1 small head cauliflower broken into florets
  • 1 small red onion thinly sliced
  • 4 carrots sliced into coins
  • 2 cucumber sliced
  • 1 bell pepper sliced
  • 1 cup cherry tomatoes whole
  • 1 cup green olives
  • Marinade

Marinade

Instructions
 

  • Add all prepared vegetables to a large glass container or bowl.
  • In a separate bowl, whisk together all marinade ingredients except the bay leaf.
  • Add the bay leaf to the marinade.
  • Pour marinade over vegetables and toss well.
  • Cover and refrigerate for at least 6 hours or overnight.
