Ingredients
  

For The Salad

  • 1 cup dry couscous
  • 1 cup boiling water or vegetable broth
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 15 oz can chickpeas drained and rinsed
  • 1/2 small red onion finely diced
  • 1/2 cup bell pepper diced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons fresh mint chopped (optional)
  • 1/4 cup kalamata olives halved (optional)

For The Lemon - Herb Dressing

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon red wine vinegar
  • 1 garlic clove minced
  • 1 teaspoon Dijon mustard
  • 1 to 2 teaspoons honey
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

  • Place dry couscous in a large bowl. Pour in boiling water or broth, cover tightly, and let it sit for 5 minutes. Fluff with a fork and allow to cool.
  • In a small jar shake together olive oil, lemon juice, zest, vinegar, garlic, mustard, honey, oregano, salt, and pepper. (or whisk together in a small bowl).
  • Add tomatoes, cucumber, chickpeas, onion, bell pepper, feta, parsley, mint, and olives to the cooled couscous.
  • Drizzle dressing over the salad and toss gently to combine. Taste and adjust seasoning. Chill before serving if desired.
