Bring a large pot of salted water to a boil. Cook pasta until al dente. Cooked but firm to the bite. Drain and set aside.
In a pan over medium heat, heat the olive oil. Toss in the finely chopped shallots and minced garlic. Sautee' them in the olive oil for about 2 minutes. Add the chopped zucchini and cook just until tender. Add in the halved cherry tomatoes, and olives and cook tossing frequently for about 5 minutes.
Add the cooked pasta, white wine vinegar, parsley and pepper and toss to coat. Transfer to a serving dish and sprinkle fresh chopped basil and grated parmesan cheese over top.
