Pasta With Zucchini And Cherry Tomatoes

Ingredients
  

  • 12 oz pasta spahetti, fettucine, penne, homemade or any pasta shape you desire
  • 1/3 cup olive oil
  • 1/2 cup diced shallots or green onions
  • 3 cloves garlic minced
  • 1 medium zucchini cut into 1 inch pieces
  • 2 cups cherry tomatoes cut in 1/2
  • 1/2 cup green olives
  • 1/4 cup white wine vinegar
  • 1 tsp black pepper
  • 2 Tbsp fresh parsley chopped
  • 1/4 cup grated parmesan cheese
  • 2 Tbsp fresh basil

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pasta until al dente. Cooked but firm to the bite. Drain and set aside.
  • In a pan over medium heat, heat the olive oil. Toss in the finely chopped shallots and minced garlic. Sautee' them in the olive oil for about 2 minutes. Add the chopped zucchini and cook just until tender. Add in the halved cherry tomatoes, and olives and cook tossing frequently for about 5 minutes.
  • Add the cooked pasta, white wine vinegar, parsley and pepper and toss to coat. Transfer to a serving dish and sprinkle fresh chopped basil and grated parmesan cheese over top.
