  • 1 4-5 pounds whole chicken
  • 2 tablespoons olive oil

Dry Rub

Steam Can

  • 1 cup ginger beer or ginger ale
  • 1/2 sweet onion chopped
  • 3 garlic cloves smashed

BBQ Glaze

Instructions
 

  • Preheat smoker grill or oven to 375°F.
  • Pat chicken dry and rub with olive oil.
  • Combine dry rub ingredients and season chicken evenly.
  • Pour ginger beer into can
  • Add onion and garlic directly into the can.
  • Carefully place chicken upright over the can.
  • Smoke or roast for 1 hour 15 minutes to 1 hour 30 minutes until thigh reaches 175°F.
  • Whisk together BBQ glaze ingredients.
  • Brush glaze over chicken during final 20 minutes of cooking.
  • Let rest for 10 minutes before slicing.
