These savory zucchini bars are perfect for appetizers, brunch or dinner. Add some ham for a quick summer meal! They are great for picnics, potlucks or dinner parties as well.

Ingredients
  

  • 3 cups zucchini shredded
  • 1 cup bisquik
  • 1/2 cup onion chopped fine
  • 3/4 cup parmesan cheese reccommend freshly grated
  • 1/4 cup olive oil
  • 4 large eggs slightly beaten
  • 1 tsp italian seasoning
  • 2 Tbsp garlic minced or 2 tsp garlic powder
  • 1 tsp onion powder
  • 2 Tbsp fresh parsley chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions
 

  • Preheat oven to 350 degrees ℉. Grease a 9 x 13 baking dish.
  • Grate the zucchini and parmesan cheese. Set aside. In a medium mixing bowl combine remaining ingredients. Add the zucchini and parmesan cheese.
  • Mix well and pour into baking dish. Bake for 30 minutes or until set and lightly golden. Enjoy warm or cold.
