3 cups zucchini shredded 1 cup bisquik 1/2 cup onion chopped fine 3/4 cup parmesan cheese reccommend freshly grated 1/4 cup olive oil 4 large eggs slightly beaten 1 tsp italian seasoning 2 Tbsp garlic minced or 2 tsp garlic powder 1 tsp onion powder 2 Tbsp fresh parsley chopped 1/2 tsp salt 1/2 tsp pepper
Preheat oven to 350 degrees ℉. Grease a 9 x 13 baking dish.
Grate the zucchini and parmesan cheese. Set aside. In a medium mixing bowl combine remaining ingredients. Add the zucchini and parmesan cheese.
Mix well and pour into baking dish. Bake for 30 minutes or until set and lightly golden. Enjoy warm or cold.
