What sets this Pepper Slaw apart from traditional coleslaw is the vibrant combination of bell peppers and the sweet and sour dressing. This recipe contains no olive oil, just apple cider vinegar and sugar. The addition of celery seeds provides a subtle earthiness. The peppers add not only a burst of color but also a delightful sweetness. The crispness of the sweet bell peppers perfectly complements the crunchy cabbage. Red onion can be added to this also.
You can serve this easy pepper Slaw recipe with, pulled pork sandwiches, hot dogs, juicy burgers or as topping for fish tacos, a filling for sandwiches, or in wraps. The slaw’s tanginess can help cut through the richness of these dishes, providing a refreshing balance. This cabbage slaw makes a fantastic addition to any summer picnic or potluck, or a side dish for any day of the week.

How To Make Pepper Slaw
Use a food processor if you like finely grated vegetables. Or grate by hand using a box grater for courser veggies. I often do a rough chop on the cabbage using a knife.
In a small bowl whisk together the vinegar, sugar, water, celery seed, salt and pepper. Combine the dressing with the green cabbage mixture in a large serving bowl, cover and refrigerate the cabbage mixture for at least 1 hour. That’s it! Easy Pepper Slaw is so quick to mix up. And you can make it ahead, the longer it sits the better it gets! It will last in the refrigerater a good 2 weeks.
