I love traditional cream slaw, but this is a refreshing change and goes great with just about anything. The best part about pepper slaw is that it is a healthy, low-calorie easy side dish. What sets this Pepper Slaw apart from traditional coleslaw is the vibrant combination of bell peppers and the sweet and sour dressing. This recipe contains no olive oil, just apple cider vinegar and sugar. The addition of celery seeds provides a subtle earthiness. The peppers add not only a burst of color but also a delightful sweetness. The crispness of the sweet bell peppers perfectly complements the crunchy cabbage. Red onion can be added to this also.
