Ham & Egg Breakfast Noodles have been one of my favorite old-fashioned comfort food meals ever since I was a little girl. My grandma used to make buttery egg noodles with scrambled eggs when she wanted something simple, filling, and made with ingredients she always had on hand. It wasn’t fancy, but somehow those humble ingredients always tasted like home.
Over the years, I couldn’t resist giving her recipe my own little twist. Today, I add diced ham for a little extra heartiness and finish everything with a sprinkle of sharp cheddar cheese that melts right over the top. It keeps all the nostalgic flavors I remember while turning it into a complete meal that’s perfect for breakfast, brunch, lunch, or even breakfast for dinner.
If you’re looking for an inexpensive recipe that’s quick to make and guaranteed to bring a little comfort to the table, I think you’re going to love these Ham & Egg Breakfast Noodles.

How to Make Ham & Egg Breakfast Noodles
Step 1
Cook the egg noodles according to the package directions until just tender. Drain well.
Step 2
Meanwhile, whisk together the eggs, garlic powder, onion powder, salt, and pepper until well combined.

Step 3
Melt the butter in a large skillet over medium heat.
Step 4
Add the cooked noodles and cook for about 5 to 7 minutes, stirring occasionally, until some of the noodles become lightly golden around the edges. This little extra step adds so much buttery flavor.

Step 5
Stir in the diced ham and cook for another 2 to 3 minutes until warmed through and lightly browned.
Step 6
Reduce the heat to medium-low. Pour the beaten eggs evenly over the noodles. Using a spatula, gently fold and stir until the eggs are softly scrambled and almost completely set.
Step 7
Sprinkle the shredded cheddar cheese over the top. Cover the skillet for about a minute, just until the cheese melts.
Step 8
Finish with freshly cracked black pepper and chopped chives or parsley before serving.

Absolutely! This is one of my favorite ways to use leftover holiday ham.
Can I freeze it?
I don’t recommend freezing it because scrambled eggs can become watery after thawing.
