Homemade Noodles Recipe
- 2 cups all-purpose flour
- 3 large eggs room temperature
- 1 Tbsp olive oil
- 1/2 tsp salt
How to Make the Homemade Noodles
Mixing The Dough
Clear a clean and spacious countertop or workspace. Place your KitchenAid mixer with the dough hook attachment nearby. Have the pasta roller and cutter attachments ready.
In your stand mixing bowl, combine 2 cups of all-purpose flour and 1/2 teaspoon of salt. Mix them together. Make a well in the center. Crack the 3 large eggs into the well. Pour in the 2 tablespoons of olive oil.
Start your KitchenAid mixer with the dough hook attachment on the lowest setting to combine the ingredients for homemade noodles. Allow the mixer to knead the dough for about 2-3 minutes until it comes together. If the dough looks too dry, you can add a little water, one tablespoon at a time, until it forms a ball. If it’s too sticky, add a bit more flour.
Once the dough has come together, increase the mixer speed slightly and knead the homemade noodle dough for about 4-5 minutes until it becomes smooth and elastic.
Resting the Dough
Remove the dough from the mixer and form it into a ball. Wrap the dough in plastic wrap or cover it with a kitchen towel. Let the dough rest for at least 30 minutes at room temperature. This allows the gluten to relax and makes it easier to roll out.
Rolling the Dough
Divide the rested dough into 4 smaller portions, so it’s easier to work with. Attach the pasta roller attachment to your KitchenAid mixer. Set the roller to the widest setting (usually 1). Flatten one portion of dough with your hands and feed it through the roller. Fold the dough in half and repeat the process, rolling it through several times until it becomes smooth and consistent. Gradually reduce the roller setting to your desired thickness. Switch to the pasta cutter attachment and pass the rolled dough through to create your desired pasta shape (e.g., fettuccine, spaghetti, or lasagna sheets).
You can either cook the homemade noodles immediately in boiling salted water for a few minutes or let them air-dry for long term storage and have ready for recipes like this!
Slow-Cooked Roast Beef and the Perfect Broth
Roast beef is the star of this dish, and the secret to its tenderness is a good sear in a hot skillet then a slow cook. Rub the beef with salt and pepper and in a cast iron skillet or heavy skillet drizzle 2 Tbsp. oil. Heat the oil until it’s good and hot and place the roast beef in the skillet. Sear each side until it’s good and brown, for a few minutes on each side. Then remove the beef and scrape any bits from bottom of skillet into crockpot and place the beef in the crockpot. Pour 4 cups of homemade or good quality beef stock, 1/2 cup of dry white wine or white cooking wine, 3 bay leaves, 1 tsp of thyme, and 2 tsp salt and pepper over beef and cook on low for 8 hours.
When the roast beef is done, remove to a dish to cool and break into bite size pieces. Transfer the broth to a stockpot, add an additional 2-3 cups of beef stock. Heat broth to boiling and while the broth is heating peel and cut potatoes into small 1 1/2 ” pieces and add potatoes, beef and noodles to boiling broth. Boil 20-30 minutes.

- 7 cups beef stock divided
- 1/2 cup dry white wine or white cooking wine
- 3 bay leaves
- 1 tsp dried thyme
- 1 tsp salt
- 1 tsp pepper
- 12 oz egg noodles or 1 recipe my homemade noodles
- 4 large russet potatoes peeled and cubed
