Choosing What Pasta To Use
You can absolutely take your pick for this recipe when it comes to choosing which pasta to use. Spaghetti. It’s long, thin, and oh-so-versatile. Want something a bit thicker to cradle those veggies? Linguine is an excellent choice. Or if you’re feeling adventurous, try penne or fusilli to catch all those delicious juices in its spirals. But I recommend homemade pasta. Homemade pasta has a wonderful texture and absorbs the flavors of the sauces or dishes they are cooked with, making them the perfect addition to soups, stir-fries, and pasta dishes. Yes, I know I said 30 minutes for this dish, and it can be with store bought noodles or follow my recipe for homemade pasta and dry it for quick recipes like this!
Making Pasta With Zucchini And Tomatoes
In a pan over medium heat, heat the olive oil. Toss in the finely chopped shallots and minced garlic. Sautee’ them in the olive oil for about 2 minutes. Add the zucchini and cook just until tender. Throw in the cherry tomatoes, and olives and cook tossing frequently for about 5 minutes. Finally add the cooked pasta, white wine vinegar, parsley and pepper and toss to coat. Transfer to a serving dish and sprinkle fresh basil and grated parmesan cheese over top.

Pasta With Zucchini And Cherry Tomatoes
Ingredients
- 12 oz pasta spahetti, fettucine, penne, homemade or any pasta shape you desire
- 1/3 cup olive oil
- 1/2 cup diced shallots or green onions
- 3 cloves garlic minced
- 1 medium zucchini cut into 1 inch pieces
- 2 cups cherry tomatoes cut in 1/2
- 1/2 cup green olives
- 1/4 cup white wine vinegar
- 1 tsp black pepper
- 2 Tbsp fresh parsley chopped
- 1/4 cup grated parmesan cheese
- 2 Tbsp fresh basil
Instructions
- Bring a large pot of salted water to a boil. Cook pasta until al dente. Cooked but firm to the bite. Drain and set aside.
- In a pan over medium heat, heat the olive oil. Toss in the finely chopped shallots and minced garlic. Sautee' them in the olive oil for about 2 minutes. Add the chopped zucchini and cook just until tender. Add in the halved cherry tomatoes, and olives and cook tossing frequently for about 5 minutes.
- Add the cooked pasta, white wine vinegar, parsley and pepper and toss to coat. Transfer to a serving dish and sprinkle fresh chopped basil and grated parmesan cheese over top.
