To make these apple puff pastry rolls, start by peeling and dicing three medium apples into small 1/4 inch pieces. Mix the apples with the lemon juice, lemon zest, sugar, cinnamon, and vanilla in a medium saucepan and cook over medium heat until the apples are just fork tender, about 5 minutes. Set aside to cool. Melt the butter. Combine the white sugar and the cinnamon.
