Ingredients
  

  • 2 haddock fillets
  • 1/2 cup panko or bread crumbs lightly toasted
  • 4 Tbsp salted butter melted
  • 1 tsp garlic minced or roasted see note*
  • 1 lemon sliced
  • 1 tsp salt
  • 1 tsp pepper
  • parsley optional

Instructions
 

  • Preheat the oven to 400°F (200°C) and put 2 Tbsp melted butter in bottom of a baking dish.
  • Place the lemon slices in a single layer at the bottom of the greased baking dish.
  • In a mixing bowl, combine the breadcrumbs, minced garlic. Mix well.
  • Brush each haddock fillet with melted butter, coating both sides. Then press bread crumb mixture, on top of each fish fillet.
  • Bake the haddock for about 15-20 minutes or until the fish flakes easily with a fork. The breadcrumbs should turn golden brown, forming a crust on top.
  • Once cooked, remove the baking dish from the oven and allow the haddock to rest for a few minutes. Sprinkle with chopped fresh parsley and a squeeze of fresh lemon.
