Preheat the oven to 400°F (200°C) and put 2 Tbsp melted butter in bottom of a baking dish.
Place the lemon slices in a single layer at the bottom of the greased baking dish.
In a mixing bowl, combine the breadcrumbs, minced garlic. Mix well.
Brush each haddock fillet with melted butter, coating both sides. Then press bread crumb mixture, on top of each fish fillet.
Bake the haddock for about 15-20 minutes or until the fish flakes easily with a fork. The breadcrumbs should turn golden brown, forming a crust on top.
Once cooked, remove the baking dish from the oven and allow the haddock to rest for a few minutes. Sprinkle with chopped fresh parsley and a squeeze of fresh lemon.
