Instructions
Preheat your grill to medium heat (if using a smoker such as traeger heat to 400℉) Rub each ear of corn with olive oil and salt and pepper. Grill the ears for about 10 minutes turning every few minutes until ears are lightly browned and have char marks on them. Remove from grill and let cool. Carefully cut the kernels from the cob.
Chop the cucumbers in to bite size pieces. Halve the cherry tomatoes and slice your onions or leeks into thin slices. Chop parsley or basil.
In a medium size bowl place corn, cucumber, tomatoes and leeks or onions and parsley or basil.
In a small bowl whisk together the olive oil, white vinegar, honey and salt an pepper.
Pour over the salad and toss gently to coat. Sprinkle with chopped fresh parsley or fresh basil.
