Preheat your grill to 400 degrees. Wash and dry the zucchini, cut off both ends, and cut the zucchini in half. Cut each 1/2 in 1/2 lengthwise. Cut 4 spears from each 1/2. You can make these as big or as small as you like. Place zucchini in a large bowl and drizzle with the olive oil tossing to coat. Sprinkle Italian seasoning, salt, and pepper on top and toss well. Place on a preheated grill for about 5-6 minutes per side or until they have browned grill marks and are tender. Remove from grill and grate parmesan cheese over the top and drizzle with balsamic vinegar if desired.
