Making Grilled Zucchini Spears

zucchini spears on grill

Preheat your gas grill or smoker, or light your charcoal grill. Give the zucchini a good wash and slice them in spears; you can cut them in rounds. Place zucchini spears in a large bowl and drizzle with olive oil. Sprinkle with Italian seasoning, salt and pepper. Toss to coat. Place directly on your hot grill. You can also use a grill pan and layer them in a single layer. Grill zucchini spears for 3-4 minutes for more minor cuts and 5-6 minutes for more significant cuts a side until they are browned with grill marks and just fork tender. Don’t overcook, or you’ll have mushy zucchini! Grate parmesan cheese, drizzle a little balsamic vinegar, and serve! These are great served alongside steak, chicken, or pork!
