  • Preheat oven to 350 degrees℉. Grease 1 8 x 4 bread pan or 3 mini loaf pans
  • In a small bowl for the topping, cut the flour, sugars, butter and cinnamon using a fork or pastry cutter to mix together until it forms crumbs and the butter is incorporated. Set aside. This makes more crumb mixture than you will need-just pop the rest in the freezer to use at a later time!
  • In a small bowl whisk together the flour, baking powder, baking soda, salt, nutmeg and cinnamon. Set aside. In the bowl of a stand mixer mix the eggs, sugars, sour cream, oil and vanilla together. Add the dry ingredients and mix just until combined. Stir in the shredded Zucchini. Pour into prepared pan and sprinkle streusel topping evenly over top. Bake large loaf for 60 minutes or mini loaves for 45 minutes or until a toothpick inserted comes out clean.
