- 1/2 cup olive oil (or coconut oil or any healthy fats)
- 1/2 cup honey (or maple syrup )
- 1 1/2 cups nuts & seeds (I’m using almonds, pecans, and sunflower seeds)
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 2 tsp vanilla
- 1/2 tsp freshly grated nutmeg
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine oats, olive oil, honey, nuts & seeds, cinnamon, salt, vanilla, and nutmeg.
- Spread the mixture in an even layer on a baking sheet.
- Bake for 20-25 minutes, stirring halfway through.
- If you’re adding coconut flakes, sprinkle it on halfway through to get that lightly toasted perfection.
