How to Make Zucchini Donut Muffins

Step 1

Preheat your oven to 350°F. Lightly grease a mini muffin pan with nonstick cooking spray.

Step 2

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

In a separate large bowl, whisk together the granulated sugar, brown sugar, eggs, vegetable oil, melted butter, sour cream, and vanilla until smooth.

Step 4

Gradually stir the dry ingredients into the wet ingredients just until combined. Be careful not to overmix.

Fold in the finely chopped zucchini until evenly distributed throughout the batter.

Transfer the batter to a disposable piping bag or a large zip-top bag with one corner snipped off. Pipe the batter into the mini muffin pan, filling each cup about ¾ full. This method is much quicker, creates less mess, and gives every muffin a consistent size.

Bake for 10 to 13 minutes, or until the tops spring back lightly when touched and a toothpick inserted into the center comes out clean.

Allow the muffins to cool in the pan for about 3 minutes before removing them.

Absolutely!

Place the cooled muffins in a freezer-safe container or zip-top freezer bag and freeze for up to 3 months.

When you’re ready to enjoy them, let them thaw at room temperature or warm them for a few seconds in the microwave. They’ll taste almost like they were freshly baked.
