If you’re a fan delicious recipe and have a soft spot for zucchini, then you’re in for a treat! We all have loads of fresh zucchini from the garden or from that neighbor that just keeps dropping them off. So today, we’re diving into the world of Zucchinicious Bars-savory zucchini bars. This recipe is one of my favorite ways to use up fresh zucchini.

How to Make these Parmesan Zucchini Squares

Grease a 9 x 13 baking dish and set aside.

Begin by shredding your zucchini and parmesan cheese. This box grater is great for zucchini, one of the easiest vegetables to grate.

Combine the remaining ingredients and pour into your prepared baking dish. Bake at 350 degrees for 30 minutes or until set and golden brown.

Cut into squares and serve hot or room temperature.

To store the bars in the refrigerator, wrap them tightly in plastic wrap and store them in an airtight container.

They can be stored in the fridge for up to 5 days.

Can I Freeze Zucchinicious Bars?

Yes, You Can! Follow these easy steps and you’ll have a quick lunch or appetizer!

Allow the zucchini bars to cool completely before freezing.

Freeze the bars in a single layer so that they freeze evenly.

Wrap the bars tightly in plastic wrap, then place them in a zip-top freezer bag.

Label the bag with the date and contents.

To reheat the frozen bars, remove them from the freezer and let them thaw in the refrigerator overnight.

Once thawed, reheat the bars in the oven at 350°F for about 10 minutes or until heated through.

Ingredients
  

  • 3 cups zucchini shredded
  • 1 cup bisquik
  • 1/2 cup onion chopped fine
  • 3/4 cup parmesan cheese reccommend freshly grated
  • 1/4 cup olive oil
  • 4 large eggs slightly beaten
  • 1 tsp italian seasoning
  • 2 Tbsp garlic minced or 2 tsp garlic powder
  • 1 tsp onion powder
  • 2 Tbsp fresh parsley chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions
 

  • Preheat oven to 350 degrees ℉. Grease a 9 x 13 baking dish.
  • Grate the zucchini and parmesan cheese. Set aside. In a medium mixing bowl combine remaining ingredients. Add the zucchini and parmesan cheese.
  • Mix well and pour into baking dish. Bake for 30 minutes or until set and lightly golden. Enjoy warm or cold.
