Grilled Zucchini Spears

Grilled zucchini Spears are not only delicious! But they also are low in calories and packed with vitamins and minerals! Plus, it’s a fantastic way to use those zucchinis that always seem to multiply in the garden during summer. They are the perfect quick side dish. If you’ve ever grown zucchini in your garden or know someone who has, I’m sure you know these plants produce loads of zucchini. You can bake these in the oven just as easily, just no grill marks if you don’t use your grill during the winter months. Grilled Zucchini Spears are incredibly easy to make and are so delicious they are one of my favorite side dishes. You can use any seasonings or fresh herbs you like; these are one of my favorites with olive oil, Italian seasoning, salt and pepper. With parmesan cheese grated over them and a drizzle of balsamic vinegar after removing from the grill. You can make thick or thin planks or even make zucchini slices.

Ingredients For Grilled Zucchini Spears:

Zucchini – Choose ones that are firm, with shiny skin and no blemishes. And not too big. The large Zucchini have tough skin and are seedy, the small -medium zucchini are tender with smaller seeds.

Italian Seasoning – Italian Seasoning can be substituted with your preferred herbs or spices. Add a dash of red pepper flakes or cayenne for some heat.

Olive Oil

Salt & Black Pepper

Parmesan Cheese

Balsamic Vinegar – optional

Making Grilled Zucchini Spears

Preheat your gas grill or smoker, or light your charcoal grill. Give the zucchini a good wash and slice them in spears; you can cut them in rounds. Place zucchini spears in a large bowl and drizzle with olive oil. Sprinkle with Italian seasoning, salt and pepper. Toss to coat.

Place directly on your hot grill. You can also use a grill pan and layer them in a single layer. Grill zucchini spears for 3-4 minutes for more minor cuts and 5-6 minutes for more significant cuts a side until they are browned with grill marks and just fork tender. Don’t overcook, or you’ll have mushy zucchini! Grate parmesan cheese, drizzle a little balsamic vinegar, and serve! These are great served alongside steak, chicken, or pork!

  • Preheat your grill to 400 degrees. Wash and dry the zucchini, cut off both ends, and cut the zucchini in half. Cut each 1/2 in 1/2 lengthwise. Cut 4 spears from each 1/2. You can make these as big or as small as you like. Place zucchini in a large bowl and drizzle with the olive oil tossing to coat. Sprinkle Italian seasoning, salt, and pepper on top and toss well. Place on a preheated grill for about 5-6 minutes per side or until they have browned grill marks and are tender. Remove from grill and grate parmesan cheese over the top and drizzle with balsamic vinegar if desired.
